It’s not often that you get to use the BBQ to create a salad, so this recipe is definitely worth giving a try. With a creamy, garlicky dressing balanced with plenty of lemon juice, this salad may seem simple, but the flavours are so much more complex.

5 little gem lettuces, halved
1 lemon, halved
80g creme fraiche
1 small clove of garlic, crushed
Pinch of salt
Pinch of caster sugar
1tbsp Mellow Yellow Rapeseed Oil
1 green chilli, sliced (optional)
Serves 6 as a side.
Heat up your BBQ.
Place your lemons on the BBQ, cut side down. BBQ for 3-5 minutes until just starting to char.
Remove your lemons from the BBQ and put to one side.
BBQ your little gem lettuces, cut side down, for a couple of minutes until griddle marks appear.
Remove the little gems from the BBQ and place into a large serving bowl.
To make the dressing, mic together the creme fraiche, garlic, salt, sugar, oil and all the juice from the BBQ'd lemon.
Drizzle your dressing over the BBQ'd little gems, sprinkle with sliced green chilli, if using, and serve.
