Including spinach, asparagus and egg in this recipe adds plenty of protein to give you lots of energy and help promote healthy muscles and bones. With avocado and parmesan for even more flavour, this salad is packed full of nutrients and is filling enough to be a main course.

60g Spinach (2 large handfuls)
1 Avocado, sliced
2 Boiled Eggs, quartered
2 tbsp Farrington's Mellow Yellow Classic Vinaigrette
1 tbsp Farrington's Mellow Yellow Rapeseed Oil
Pour your Farrington's Mellow Yellow Rapeseed Oil into a sauté pan and heat. Add the asparagus and a pinch of salt. Gently fry your asparagus until tender, turning as they cook.
Assemble your salad with spinach first, then sliced avocado, boiled eggs, asparagus and sprinkle over vegan parmesan shavings if using. Drizzle with Farrington's Mellow Yellow Classic Vinaigrette and enjoy!
