BBQ Vegetables


BBQ’s don’t just have to consist of slightly charred sausages and a burger, grab some fresh vegetables and a bottle of Mellow Yellow Cold Pressed Rapeseed Oil and add some colour to your summer BBQ’s! We’ve gone for peppers, courgettes and mushrooms, but you could use whatever vegetables you have in the fridge to create delicious BBQ Vegetables. Serve with a dollop of Homemade Mayonnaise to add even more flavour to your BBQ.

Ingredients

Mixed peppers, cut into quarters
Courgettes, sliced lengthways
Mushrooms
Mellow Yellow Rapeseed Oil

Method

Preheat your BBQ.

Cut your vegetables into large chunks or leave whole if the vegetables are smaller. Brush with Mellow Yellow Rapeseed Oil and season with salt and pepper. Place the vegetables on your BBQ and leave until cooked through. Turn halfway through to ensure vegetables are cooked evenly on both sides, making sure to keep an eye throughout the cooking so they don't burn.

Aubergine is also delicious on the BBQ!
