Our Broccoli Quinoa Salad uses Mellow Yellow Honey & Mustard Dressing to add a fantastic flavour to this healthy, simple salad. Perfect for a packed lunch or a quick side dish for dinner, simply put everything in a food processor and mix! Although broccoli is usually cooked, we’ve found that by putting it into a food processor raw, it adds a fantastic fresh flavour to this salad and stay packed full of all the vitamins and nutrients that may be lost when heated.
350g broccoli, chopped
1 small red onion, chopped
Handful of fresh basil
1 tsp salt
¼ tsp pepper
¼ tsp fine garlic granules
125ml Mellow Yellow Honey & Mustard Dressing
250g quinoa, precooked
Put your chopped broccoli, onion, basil, salt, pepper and garlic granules into a food processor and blitz for approximately 30 seconds, or until everything is well combined and there are no large chunks.
Mix in your Mellow Yellow Honey & Mustard Dressing and quinoa.
Assemble the salad by mixing up with salad leaves and your broccoli and quinoa mixture.
Finish with a drizzle of Mellow Yellow Honey & Mustard dressing and serve!
