Chicken and Egg Protein Salad


This Chicken and Egg Protein Salad is super filling and full of flavour from our Mellow Yellow Classic Vinaigrette. Including both chicken and egg in this recipe adds plenty of protein to give you lots of energy and help promote healthy muscles and bones. We love using our recipe for Crispy Chicken Goujons in this salad but you can use ready made breaded chicken if you prefer, although our homemade recipe is absolutely delicious! With spinach, avocado and parmesan for even more flavour, this salad is packed full of nutrients and is filling enough to be a main course.

Ingredients

2 Breaded Chicken Breasts (try homemade with our recipe)
60g Spinach (2 large handfuls)
1 Avocado, sliced
2 Boiled Eggs, quartered
Parmesan Shavings
2 tbsp Farrington's Mellow Yellow Classic Vinaigrette

Method

Cook your breaded chicken breasts and slice.
Assemble your salad with spinach first, then sliced avocado, boiled eggs, sliced chicken and sprinkle over parmesan shavings. Drizzle with Farrington's Mellow Yellow Classic Vinaigrette and enjoy!
