Sprouting Broccoli Salad with Feta and Toasted Almonds


This simple Sprouting Broccoli Salad with Feta and Toasted Almonds is packed full of flavour. The dressing is balanced with the sweetness of honey and sharper apple cider vinegar, alongside bold crushed garlic. We absolutely love the addition of toasted almonds for a deep, rich nutty depth, plus, creamy feta to fully round out the flavours. Enjoy this salad alongside a simple cut of meat or with a BBQ.

Ingredients

1tbsp apple cider vinegar
1tbsp honey
1 small clove of garlic, crushed
1tbsp Mellow Yellow Rapeseed Oil

300g sprouting broccoli
100g feta, crumbled
50g almonds, roughly chopped

Method

Blanch the broccoli in boiling water for 2 minutes and then refresh in very cold water.
Toast the roughly chopped almonds in a dry frying pan until golden and fragrant.
In a small bowl, mix together the apple cider vinegar, honey, crushed garlic and Mellow Yellow Rapeseed Oil.
Pour the dressing over your sprouting broccoli and top with crumbled feta and toasted almonds.
