125g cooked lentils
1 carrot, grated
50g peas (remove frozen peas from the freezer 30 minutes before use)
½ red onion, finely chopped
1tbsp parsley, finely chopped
2tbsp Mellow Yellow Honey & Mustard Dressing
Handful of pea shoots
In a bowl, mix together your cooked lentils, grated carrot, peas, chopped red onion, chopped parsley and Mellow Yellow Honey & Mustard Dressing. Mix until well combined.
In a jar, add a handful of pea shoots and layer your lentil mix on top. Close your jar and enjoy your picnic pot.
We suggest eating this salad on the day you assemble it and it will be fine kept out the fridge for a few hours if you want to take it to a picnic or event.
