Air fryer Roasted Tomato and Red Pepper Gnocchi


This is a wonderfully quick and easy recipe with a delicious roasted red pepper and plum tomato sauce made from scratch in under 30 minutes. Our Mellow Yellow Rapeseed oil combines all the flavours of the roasting vegetables and the fabulous sauce is a smothered over fried gnocchi and sprinkled with Parmesan shavings. Ingredients

Mellow Yellow Rapeseed Oil
200g baby plum tomatoes
1 red pepper (cut into large chunks)
1 small onion (cut into large chunks)
2 cloves garlic (sliced)
Large handful fresh basil
500g gnocchi
Salt and black pepper
Parmesan

Method

Simply place the baby plum tomatoes, red pepper, onion and garlic in the air fryer (with the frying plinth removed).

Drizzle over 1.5 tablespoons Mellow Yellow Rapeseed Oil, season with plenty of salt and black pepper and stir to coat thoroughly.

Roast for around 20 minutes on 190°C until all the vegetable are softened and browning, stir occasionally to ensure even roasting.

Blitz the roasted vegetable with a stick blender to create a smooth sauce and stir in a handful of chopped basil.

Place the gnocchi in the air fryer (no need to wash it after the vegetable roasting) and drizzle over a tablespoon of Mellow Yellow Rapeseed Oil.

Fry for 5 minutes on 190° stirring occasionally.

Pour the sauce over the fried gnocchi and stir thoroughly to coat. Serve with extra fresh basil and parmesan shavings.
