Inspired by the classic Pea & Ham Soup, we have created this delicious Smoky Vegan Pea Soup using our Mellow Yellow Oak Smoked Rapeseed Oil. Adding a wonderfully deep smoky flavour, using our oak smoked rapeseed oil is perfect in this recipe and works so well with the fresh flavour of the peas. By stirring in a little extra smoked oil at the end of the recipe, it really does add an incredible depth of flavour to the soup.

2 tbsp Mellow Yellow Oak Smoked Rapeseed Oil
1 small onion, chopped
1 leek, washed & chopped
1 clove of garlic, crushed
500ml vegetable stock
200g frozen peas
Pour 1 tablespoon of your Mellow Yellow Oak Smoked Rapeseed Oil in a large saucepan. Add your chopped onion and leek and fry until softened.
Add the crushed garlic and fry for a couple more minutes.
Add the vegetable stock and peas and simmer for 10-15 minutes.
Take off the heat and blend with a stick blender until smooth.
Stir in 1 tablespoon of Mellow Yellow Oak Smoked Rapeseed Oil and a generous grind of black pepper.
