Roasted Broccoli Recipe with Lemon & Pine Nuts


Theres nothing boring about this roasted broccoli recipe, an explosion of flavours; cheesy, nutty, citrus and fresh. Lightly roasted tender stem broccoli retains its natural goodness, keeps its lovely green colour and wonderful texture as it is not overcooked. This fresh flavour is then even further improved by the addition of lemon adding citrus notes, pine nuts adding a delicate nuttiness and parmesan adding a salty savoury flavours. Delicious!

Ingredients

500g tenderstem broccoli
2 cloves garlic peeled and thinly sliced
Sea salt
2 tablespoons Mellow Yellow Rapeseed Oil
Freshly ground black pepper
1 lemon, finely grated zest and juice
3 tbsp roasted pine nuts
35g Parmesan shavings

Method

Preheat the oven to 190°C.
Place broccoli and garlic into an oven proof dish. Season and drizzle with a generous tablespoon of Mellow Yellow, toss to coat thoroughly. Roast for 20-25 mins until slightly tender. Meanwhile combine the lemon juice, zest and 1 tablespoon oil. When the broccoli is ready, immediately drizzle with the lemon mixture, sprinkle with Parmesan and pine nuts and toss to combine. Serve hot.
