Plum Muffins

Use British plums when in season for a brilliant fresh plum flavour in these delicious and simple plum muffins. Enjoy these with a cup of tea in the sunshine, the perfect mid-afternoon treat!


280g plain flour
80g ground almonds
1tsp baking powder
Cinnamon, pinch
100g golden caster sugar
150g soured cream
2 eggs
zest of 1 lemon
80ml Mellow Yellow rapeseed oil
200g plums


Combine your flour, ground almonds, baking powder and cinnamon. Stir well and put to one side. In a separate mixing bowl, add your sugar, soured cream, zest of 1 lemon and 2 large eggs. Stir together and pour in your Mellow Yellow rapeseed oil and mix. Add your dry ingredients to your wet and stir until fully combined. Spoon into 12 muffin cases and top with slices of plum. Bake at 160°C for 20-25 minutes. Leave to cool and serve.

Top tip: For extra flavour, chop up half of your plums and stir into your mix before baking.
