Apple and sultana muffins are a simple fruity little bake, great choice to make with little helpers, and perfect to use up some apples.
5oz light brown caster sugar
5fl oz Mellow Yellow rapeseed oil
12oz grated apple
8oz wholemeal self raising flour
1 tsp baking powder
¾ tsp bicarbonate of soda
1½ tsp ground cinnamon
½ tsp salt
3 tbsp milk powder
Preheat the oven to 180°C/350°F/gas mark 4.
Combine the flour, bicarbonate of soda, baking powder, salt and cinnamon and mix well.
In another bowl, thoroughly beat together Mellow Yellow, sugar, eggs and milk powder. Stir in the grated apple and sultanas. Then gradually add the flour mixture and beating just enough to combine all the ingredients.
Spoon into a muffin tin lined with 12 cases, and bake for around 25 minutes.
