Chocolate and Banana Muffins are a great way to use up the rest of those bananas and to bake. An easy recipe to do with the children.
3 very ripe bananas
125ml Mellow Yellow Rapeseed Oil
2 large eggs
100g unrefined brown or muscovado sugar
225g plain flour
50g cocoa powder
100g chocolate chips (dark dairy free if required)
1 tsp bicarbonate of soda
1 tsp baking powder
Preheat the oven to 200°C/400°F/gas mark 6 and line a muffin tin with 12 cases.
Mash the bananas, add the oil followed by the eggs and sugar, mix thoroughly.
Mix the flour, cocoa, bicarb, baking powder and choc chips together and add this to the banana mixture, beating gently to combine. Spoon into the prepared cases.
Bake in the preheated oven for 15–20 minutes. Allow to cool slightly in the tin before removing to a wire rack.
