A simple but tasty meal for anytime of the year but ideal for a family BBQ. Try to leave the chicken marinating for at least 30 minutes for a real depth of flavour. With plenty of herbs, this recipe will add plenty of flavour to your BBQ’s. Delicious served with Eat Unique’s Mediterranean Lentil Salad.

4 chicken breasts, cut into 3cm chunks
2tbsp Mellow Yellow Rapeseed Oil
1tbsp dried oregano
1tbsp Mediterranean herbs
1tbsp chilli flakes
Freshly milled salt and pepper
1tbsp parsley, chopped
Juice from 1 lemon
Large handful of baby spinach
½ red onion, finely sliced
You will need:
10-15 bamboo skewers, soaked in water for 20 minutes
In a large bowl, add the chicken chunks then drizzle with Mellow Yellow Rapeseed Oil, season well and mix in the dried herbs and chilli flakes to coat. Place in the fridge for 30 minutes. Preheat the grill to high and cover a baking tray with foil. Add 3-4 chunks of chicken to each skewer, repeat until you have used up all the chicken. Cook under the grill for 8 minutes then turn over and cook for another 8 minutes. Check to see if the chicken is completely cooked through, if not, put back under the grill for a few more minutes until cooked through. When you are ready to serve, sprinkle over the parsley and squeeze the lemon over the chicken. Serve with baby spinach and finely sliced red onion.
