Southern Fried Chicken


Make this finger licking good southern fried chicken with this easy recipe, a simple seasoned flour coating and deep fried in Mellow Yellow Oil. Serve with coleslaw, potato wedges, baked beans or a fresh salad!

Ingredients

½ tsp salt for seasoning
¼ tsp garlic powder for seasoning
¼ tsp ground black pepper for seasoning
Up to 2kg chicken drumsticks (adjust quantity of chicken according to how many people you are catering for but the mixture will coat up to 2kg - we used 1kg chicken drumstick for 4 people)
3 eggs
3 tbsp water
1 tbsp hot chilli sauce
250g self raising flour
1 tsp ground black pepper
200ml Mellow Yellow Rapeseed Oil

Method

Mix seasoning ingredients together in a small bowl, sprinkle over chicken and rub in to both sides. Whisk 3 eggs in a bowl with a tablespoon of hot chilli sauce and 3 tablespoons of water. Place flour and one teaspoon of black pepper into another bowl and mix well. Thoroughly coat each piece of chicken in the egg mixture and then the flour mixture and set aside. Heat the oil in a small pan on a medium high heat - to test if the oil is hot enough, gently lower a piece of the coated chicken into the oil using tongs - it should sizzle on contact if the oil is hot enough but the oil shouldn't be so hot as to be smoking.
Taking great care fry each piece of the chicken individually in the oil for around 1 minute turning once, remove with tongs letting any excess oil drain back into the pan. Place on baking tray and repeat for the whole batch of chicken.
When all the chicken has been briefly fried, place the baking tray into the oven at 220°C for 40 minutes until thoroughly cooked through. Delicious served with potato wedges and coleslaw.
