Single Tray Breakfast

Like most people we will admit we are fed up with washing up, so why not have a super breakfast with less effort? We introduce the single tray breakfast.

Ingredients

6 asparagus spears, after snapping off woody ends
1 tsp Mellow Yellow Rapeseed Oil
4 rashers of bacon
2 mushrooms
2 cherry tomatoes
2 eggs

(Serves 2)

Method

Preheat oven to 220°C/200°C fan and lightly drizzle Mellow Yellow Rapeseed Oil into a large oven tin.
Remove woody ends and lightly oil 6 asparagus spears and place in one end of the tray. Place 4 rashers of bacon next to the asparagus, followed by 2 halved lightly oiled mushrooms and 2 halved cherry tomatoes.
Cook in the oven for 10 minutes, or until the bacon has cooked. Remove from the oven and crack 2 eggs into the remaining space. Cook until the egg whites are set.
