Chilli Chicken & Vegetable Traybake

Tender chicken thighs are marinated overnight in our Mellow Yellow Ultimate Chilli Dressing, infusing every bite with bold, zesty flavour. Simply add your favourite seasonal vegetables, pop it in the oven, and enjoy a nutritious, fuss-free dinner that’s bursting with colour and taste.

Ingredients

6 chicken thighs
100ml Mellow Yellow Ultimate Chilli Dressing
300g baby potatoes
1 fennel bulb
1 large courgette
2 red peppers
50ml Mellow Yellow Chilli Oil


Method

1) Drizzle the Mellow Yellow Ultimate Chilli Dressing over the chicken thighs and leave them in the fridge to marinate for an hour (or up to 24 hours).
2) Cut any large potatoes in half and parboil them.
3) Put all the vegetables and potatoes in a roasting pan, drizzle with the Mellow Yellow Chilli Oil and bake in the oven (180C) for about 15 minutes.
4) Take out of the oven and put the chicken thighs on top of the vegetables and return to the oven for about 30 minutes till the chicken thighs are cooked through.
