A frittata is one of those wonderfully unfussy dishes that still feels like a treat, and this high protein version brings together delicious smoky bacon, sweet pops of peas, cottage cheese and pecorino. The Mellow Yellow Cold Pressed Rapeseed Oil gives you that gorgeous golden finish thanks to its naturally high smoke point, making it ideal for frying without any bitterness.
Full of feel‑good flavour, this frittata is just as delicious warm from the pan as it is cold the next day. A brilliant make‑ahead option for lunch that works beautifully with a green salad drizzled in Blackberry Vinaigrette.
(serves 2-3)
2 tbsp Mellow Yellow Cold Pressed Rapeseed Oil
125g smoked bacon, chopped (we like nitrite-free)
1 small onion, finely chopped
120g peas
4 eggs
150g Cottage cheese
40g parmesan (or pecorino)
To serve:

Preheat the oven to 200˚C Fan
Heat the oil in a 24cm frying pan on medium heat and add the bacon, cooking for a couple of minutes before adding the onions. Stir fry until soft and translucent, then tip in the peas.
Whisk the eggs, cottage cheese and parmesan together and season with salt and pepper. Pour the mixture into the hot pan and stir to combine.
Place the pan in the oven for 15-20 minutes until cooked through and golden. When ready to serve, place the pan on the table with a green salad and a bottle of our Blackberry Vinaigrette and dive on in!
