This warming white bean mash is generously drizzled with our Mellow Yellow Chilli Oil for a comforting, tasty supper. Simple to whip up, yet singing with flavour, it pairs perfectly with seasonal cavolo nero, garlic and lemon for a balanced, satisfying meal that’s full of goodness. For the white bean mash:
2 tbsp Mellow Yellow Cold Pressed Rapeseed Oil
3 garlic cloves, finely chopped
1 x 400g jar butter beans, drained
1 tbsp lemon juice
2 tbsp nutritional yeast
1 tsp lemon zest
Salt and black pepper, to taste
A splash of oat milk for extra creaminess
For the garlic greens:
1 tbsp Mellow Yellow Cold Pressed Rapeseed Oil
3 garlic cloves, sliced
100g cavolo nero or kale, chopped (tough stalks removed)
Squeeze lemon juice
Pinch of salt
To finish:
1–2 tbsp Mellow Yellow Chilli Oil, for drizzling

Heat the Mellow Yellow oil in a small pan over low heat. Add the chopped garlic and gently cook until fragrant (but not browned). Add the beans and stir through. Stir in lemon juice, zest, salt, and pepper to taste. Add a splash of oat milk. Blend for a creamy texture.
In a frying pan, heat another tablespoon of rapeseed oil. Add the sliced garlic and cook gently until just golden. Add the chopped greens, a pinch of salt and a splash of water. Cover and steam-sauté for 4–5 minutes until wilted and tender. Finish with a squeeze of lemon juice.
Spoon the warm creamy mash onto plates or bowls. Top with the garlicky greens and finish with a generous drizzle of Mellow Yellow Chilli Oil. Scatter over lemon zest.
