Simple Apple Strudel


Our deliciously simple apple strudel is made with filo pastry to make it a bit lighter than the classic recipe and also makes it vegan! Using Mellow Yellow Rapeseed Oil is fantastic for brushing the filo pastry with and making it super crispy. The filling is made with sharp cooking apples which are perfectly balanced with sugar, cinnamon and sultanas to create a deliciously warming Apple Strudel.

Ingredients

600g chopped cooking apple, approx. 2 large cooking apples.
1 rounded tsp cinnamon
1 tbsp Mellow Yellow Rapeseed Oil
2 heaped tbsp sugar
75g sultanas

4 sheets filo pastry
3 tbsp Rapeseed oil, approx., for brushing

Method

Preheat the oven to 190°C.

In a large saucepan or frying pan, add your apples, cinnamon, Mellow Yellow Rapeseed Oil, sugar and sultanas. Gently cook for 10 minutes, or until the apples start to soften. Remove from the heat.

Place a sheet of filo pastry on a large baking tray. Brush all over with Mellow Yellow Rapeseed Oil. Add next sheet and repeat with all sheets. Do not brush the top of the last sheet with oil.

Spread your apple mixture down the middle of the pastry lengthways, leaving a 3cm gap at each end. Fold the ends over and then roll lengthways, turning to sit seam side down on the baking tray.

Brush the top with the leftover juice in the pan, you can add a drop of Mellow Yellow Rapeseed Oil to the juice if there isn’t enough.

Bake for 20-30 mins or until golden and crispy on top. Leave to cool and then dust with icing sugar. Serve with a scoop of ice cream and enjoy!
