Red Pepper Hummus Recipe


A delicious and simple twist on our classic hummus recipe. By adding roasted red pepper and garlic, this recipe for Red Pepper Hummus is bursting with flavour and colour, ideal for dipping tortilla chips or crudités for a fantastic snack or light lunch. By roasting the red pepper and the garlic, this adds a delicious sweetness to the hummus which we’re sure you’ll love.

Ingredients

1 red pepper, sliced
1 clove of garlic, thinly sliced
3 tbsp Mellow Yellow Rapeseed Oil
1/2 tsp salt
1/2 tsp smoked paprika
400g can chickpeas, drained

Method

In a roasting tin, add 1 sliced red pepper, 1 thinly sliced clove of garlic and 1 tbsp of Mellow Yellow Rapeseed Oil. Mix to fully coat and then roast for 15 minutes or until softened.
In your food processor, add the roasted red peppers and garlic, 2 tbsp Mellow Yellow Rapeseed Oil, 1/2 tsp of salt and 1/2 tsp of smoked paprika. Blend until almost smooth. Add your can of drained chickpeas and blend until smooth. Serve and enjoy!
